
Spaghetti Carbonara
Ingredients
Pasta
- 400 grams Spaghetti Use high-quality pasta for the best texture.
Sauce
- 150 grams Pancetta, diced Guanciale can be used for a more authentic flavor.
- 3 large Eggs Use fresh eggs for the best results.
- 100 grams Parmesan cheese, grated Pecorino Romano can also be used.
- 1 teaspoon Black pepper, freshly cracked Adjust to taste.
Instructions
Cooking the Pasta
- Bring a large pot of salted water to a boil.
- Add spaghetti and cook according to package instructions until al dente.
Preparing the Sauce
- In a bowl, whisk together the eggs and Parmesan cheese.
- In a large skillet over medium heat, cook the pancetta until crispy.
Combining
- Once the pasta is cooked, reserve a cup of pasta water, then drain the spaghetti.
- Add spaghetti to the skillet with pancetta. Remove from heat and quickly mix in the egg mixture, adding reserved pasta water as needed to create a creamy sauce.
- Stir in cracked black pepper to taste.
